The definition of social innovation I prefer focuses on values rather than activities or outputs.
My preferred definition emphasizes the potential impact it can have in the world – i.e., how many people it will serve (particularly vulnerable groups), how big an impact it will have on them (how great and far-reaching its effects are), and how sustainable it is (how likely it will be able to continue to provide value for those people over time).

Only social innovations that reflect the values of many can be successful. Social enterprise often requires individuals, organizations, or communities to work together to produce results and improve people’s lives in our society.
As such, it requires collaboration, a willingness to challenge conventional thinking on various subjects, conscious awareness of surrounding conditions, individual ownership of the project or idea being developed (i.e., not just ownership by people in higher-profile positions), and respect for each individual’s unique perspective and talents.
